Anyone have a good one? Remember, I am in Europe, so preferably without special American stuff that you cannot easily get here.

Well, I can just use regular limes? Or is key lime actually a special lime? From what I have seen it looks just like a regular lime fruit.

It is a special type of lime, but you can't get easily get it in most of America anyway. I'm pretty sure you could make the pie with ordinary limes.

That said, I don't know how to make one.

You *can* use regular limes, but if at all possible get yourself some Key Limes (they're smaller and more acidic). I also recommend wearing gloves when squeezing the key limes due to the acidity.

This is pretty much my favorite pie. It's incredibly easy to make (aside from perhaps the crust). Below is a pretty good recipe (sour cream is totally optional) for it from Emeril Lagasse:
Ingredients
1 1/2 cups graham cracker crumbs
1/2 cup granulated sugar
4 tablespoons (1/2 stick butter) melted
2 (14-ounce) cans sweetened condensed milk
1 cup key lime or regular lime juice
2 whole eggs
1 cup sour cream
2 tablespoons powdered sugar
1 tablespoon lime zest
Directions
Preheat the oven to 375 degrees F.

In a bowl, mix the graham cracker crumbs, sugar, and butter with your hands. Press the mixture firmly into a 9-inch pie pan, and bake until brown, about 20 minutes. Remove from the oven and allow to cool to room temperature before filling.

Lower the oven temperature to 325 degrees F.

In a separate bowl, combine the condensed milk, lime juice, and eggs. Whisk until well blended and place the filling in the cooled pie shell. Bake in the oven for 15 minutes and allow to chill in the refrigerator for at least 2 hours.

Once chilled, combine the sour cream and powdered sugar and spread over the top of the pie using a spatula. HOOKERWHORESLUT the lime zest as a garnish on top of the sour cream and serve chilled.

Sour cream has its place, but I don't really understand what it brings to a Key Lime pie. Lagasse has forgotten more about cooking than I'll ever know, but in this case, I think his unique culinary background and desire to do something different is getting in the way of an otherwise good pie.

If you use regular lime, it's a lime pie and not a key lime pie (and I don't care what Emeril says). I find the flavor of the key lime to be way more intense and acidic than the persian lime. On the bright side, I don't recall what kind of limes you have in Denmark (your celery certainly didn't look like ours!). If your limes (not lemons) are small, roundish and yellowish, you probably have key limes. Also, if you're using Noel's recipe, bear in mind that what you guys call sour cream, we call creme fraiche and I don't know that you can find sour cream there (Drol?). I don't know if or how you would have to alter the recipe for that. I've never made a key lime pie with sour cream though so...

Hmm, our limes are small and green, so don't know where they come from.

I know about the sour cream, and think I can get everything easily, besides the sweetened condensed milk, I will have to look into that.

I'm sure it'll come out yum with regular limes. I'm just kind of spoiled when it comes to do with key lime pies. =P If there are any Spanish markets, you should be able to find condensed milk there. How about the graham crackers?

edit: just saw this on wiki and thought it was funny:
In 1965, Florida State Representative Bernie Papy, Jr. introduced legislation calling for a $100 fine to be levied against anyone advertising key lime pie that is not made with key limes. The bill did not pass.

Nono! They're not digestives! Do you mean like McVitties? The kind the English eat with their tea? Those are definitely not them if so. The consistency would be completely wrong for a graham cracker crust. When are you making this pie? You might be able to go to the American market and they may have some of the things you're gonna need. Ask Drol where it is but I know there's one in Copenhagen.

Always tohught they were the same, but can prolly still get the crackers somewhere. The American store near kultorvet is unfortunately closed though, so will have to find another place I am afraid =/

That's the thing about produce....a bitch and a half to find when far out of the region. And things like key limes are not exactly "common" like tomatoes or cabbage. Have you checked online, Teg? Perhaps there is a somewhat local greenhouse grower or something. I have no idea about citrus farming in Northern Europe. Perhaps the Italians or French grow them?

There's an african foodmarket @ Ø. Farimagsgade near Sølvtorvet, they might be able to help you. Otherwise I'd check with nearby immigrant stores or check at grønttorvet - you want Citrus latifolia and not the other thing.

My wife does the sweetened sour cream topping thing for her cheesecakes as well, which leads to two cheesecakes every time because I won't eat it.

I don't dig on beef stronanoff either, sour cream remains nasty.

P.S. Anyone watching Dexter? One of the characters has had Dex in search of "The Perfect Key Lime Pie" and he just gave it to her (in fact I think that was the name of this Sunday's episode)

One of my favorite key lime pies is from Joe's Stone Crab (any Miamian will tell you Joe's rocks).

Apparently, their recipe is right on their website:

Graham Cracker Crust
1 wax paper wrapped package graham crackers,1/3 of a
1 pound box, or 1 cup plus 2 1/2 tablespoons graham
crackers crumbs
5 tablespoons melted unsalted butter
1/3 cup granulated sugar

Filling
3 egg yolks
Grated zest of 2 limes (about 1 1/2 teaspoons)
1 (14 ounce) can sweetened condensed milk
2/3 cup freshly squeezed key lime juice

Topping
I cup heavy or whipping cream, chilled
3 tablespoons confectioners' sugar

For the crust: Preheat oven to 350 degrees F. Butter a 9-inch pie pan.

Break up into crumbs in food processor or place crackers in a large plastic bag and crush with a rolling pin. Add melted butter and sugar and stir. Press crumb mixture into pan forming a neat border around the edge. Bake until set and golden, about 8 minutes, and set aside. Keep oven on.

For the filling: In an electric mixer with a wire whisk attachment, beat the egg yolks and lime zest at high speed until very fluffy, about 5 minutes, Gradually add the condensed milk and continue to beat until thick, 3 or 4 minutes longer. Lower the mixer speed and slowly add the lime juice, mixing until combined, no longer. Pour mixture into the crust. Bake for 10 minutes or until filling has just set. Cool on a wire rack, then refrigerate, Freeze for 15 to 20 minutes before serving.

For the topping: Whip the cream and confectioners sugar
until nearly stiff. Cut the pie into wedges and serve very cold. Top each wedge with dollop of whipped cream.

You can actually probably find "key limes" rather easily in Europe. They're not native to the Americas, and they are only called "key limes" in the US and vicinity. They're actually native to Southeast Asia, and so you can find them in Asian markets (at least I see them often in Asian markets here). Look for the limes that are smaller, rounder, more acidic, and juicier than your typical Persian variety. Frequently, they will come in sacks.

You might see them called "asian limes" or "bartender's limes." If you get them in an Asian market, be sure you don't get the bumpy kaffir limes. Different lime entirely.

Using standard limes will be a bit of a bitch... they're not nearly as juicy per volume, so you'll have to juice a ton of them, and your pie won't be as tart.
