Chicken
Green Peppers
Onion

Add in any other non-major ingredient or spice you want. Tomato paste, pasta, rice, cheese, etc..

I would probably roast the a whole bird and add some potatoes to your veggies and roast them with the bird.

I also hate green bells, so I rarely think of much to use them in, but you could do a breaded pan fried chicken scallopine, in another pan ahead of time slowly sweat the onions covered for like 30 mins on low low heat (don't color them) then add the onions to a blender with salt and pepper and puree it (called a soubice). Maybe some roasted potatoes still around the outside of the place, a circle of the soubice in the middle and the chicken on top of that. Compost the green bell peppers :)

Grill the breast halves (after they marinate in lime, salt, pepper, cayenne, hot sauce for 30 minutes).

Grill onions and peppers as well.

Cut into thin strips when done.

Mince some seeded fresh jalepenos and cilantro, prepare some pico de gallo.

Warm some small flour tortillas, add chicken, onions, peppers, cilantro, pico and jalepenos.

Fajitas, nice n' simple, but damn tasty. :)
