Hainan Chicken

1/4 c brown bean sauce
2 Tbsp white vinegar
1 Tbsp dark soy sauce
2 tsp sugar
1 1/2 Tbsp grated ginger
2 tsp garlic
1 serrano chili, minced

Mix all of the above togather. fry 1.5# of diced chicken breast in alil oil and add the sauce, serve over rice

Due to the lack of ingredients I made this for dinner yesterday instead of the Tom Kha Kai soup I had planned.

It was excellent dispite my lack of having any vinegar and using black bean sauce instead of brown bean, overall highly reccomended dish!

Which reminds me, do you have any tips for grating ginger, I find it to be quite troublesome compared to very finely chopping/mincing it.

I'll hit the ginger comment first... micro food processor... like 14 bucks at any decent store... great handy item

Glad you loved it... hunt for brown bean sauce... the dish traditionally a whole chicken roasted with the sauce on it... this is just my bastardization
