Chicken Satay?!

Been experimenting a bit with this, but not had the best of luck.

Does anyone have a good recipe for this? Preferably not too complicated, but i would like to make the peanut sauce and marinade myself.

Any help is appreciated.

Peanut Sauce

1 onion minced
4 tbsp grated fresh ginger
2 tbsp garlic, minced
2 cups peanut butter
1 cup Tahini (sesame paste)
2 cans coconut milk
2 cans water
1/4 c tamari or soy sauce
1 tbsp tamarind paste ot 2 oz tamarind reconstituted in hot water used above
1 tsp lemon grass minced FINE
4 tsp tumeric
2 tsp corriander

Fry on HIGH HEAT the garlic, ginger and onion with the lemongrass in a small amount of oil, add the spices and fry for about 20 seconds then add the rest and whisk till smooth, bring to a boil, then simmer for like 5 minutes on low low low heat, careful or it'll burn.

marinade is pretty basic thai, or mine is anyway. Oil, fish sauce, tumeric, lil sugar, garlic and ginger (galanga if you can find it)

I can get galanga no problem. Do you have like a basic recipe with measurements? I have one but not sure how much i like it.

I eye so much it's nuts but this'll be about right, but I also went thru my notes and realized I have been slacking, this is how it's done at the old Thai place I worked years and years ago(yes I was the lone whiteboy in the kitchen)

1/2 C coconut milk
1 1/2 tsp fish sauce
1 tsp brown sugar
1/2 tsp corriander
1/2 tsp cumin
1/2 tsp tumeric
